  • Raw bamboo shoots : One
  • (A) Rice bran : 25g
  • (A) Chili pepper : 1本
  • 塩蔵わかめ : 40g
  • (B) Water : 500ml
  • (B) Noodle soup (2-fold diluted) : 150ml
  • (B) Mirin : 大さじ1

Procedure

  1. 1) Prepare bamboo shoots 01:15

    Peel some of the surface of the bamboo shoots and cut off the roots by about 1 cm.

Point

・ Peel a few bamboo shoots and make cuts to shorten the boiling time.
・ Eliminate the harshness by boiling with rice bran and chili peppers.
・ Cool the bamboo shoots in a boiled pot to remove the lye.
・ If you don't have salted wakame seaweed, you can use 10g of dried wakame seaweed instead.
・ Do not throw away the area around the tip of the ear, but use it for miso soup.
