- (A) Mayonnaise : 1 tablespoon
- (A) Water : 大さじ4
- (B)薄力粉 : 大さじ4
- (B)片栗粉 : 大さじ1
- (B)青のり粉 : 小さじ1
- (B)塩 : 少々
- (B)こしょう : 少々
- 酢水 : 適量

Prepare burdock

Rinse the burdock cleanly and cut it into small pieces with a peeler while turning the burdock.
Soak in vinegar water for 5 minutes to remove lye and drain. -

Add the water of (A) little by little to the mayonnaise of (A) and dissolve them.
Add (B) and mix.
Add 1 burdock to it and mix. -

Put oil in a frying pan with a height of about 5 mm and heat it over medium heat.
When the oil has warmed up, use chopsticks to line up 2 in a flat circle.
Heat on medium to high medium heat for 3 minutes without burning.
When it is colored, turn it over and heat it for 6 minutes so that both sides are fried.
Take it out to a vat, drain the oil and serve it on a plate.
Point

・ Drain the water from the burdock.
