- New ginger : 300g
- 醤油 : 150g
- みりん : 100㏄
- 酢 : 50㏄

                        Prepare new ginger

                        Take the dark part of the new ginger and grate it with a demon grater. 
 Cut the remaining small parts with a kitchen knife and put them all in a storage jar.

                        Put mirin, soy sauce and vinegar in a pan and bring to a boil. 
 After boiling, remove from heat and add to 1 storage bottle to complete.
