Ingredients

  • Mushrooms (oyster mushrooms, maitake mushrooms, enoki mushrooms, shiitake mushrooms) : 600g

Procedure

  1. 1) prepare the mushrooms 06:46

    Cut off the stems of the shiitake mushrooms and tear them apart by hand.
    Cut off the base of the enoki mushrooms and cut them in half lengthwise.

    Cut the maitake mushrooms into easy-to-eat pieces.
    Crack the oyster mushrooms by hand and tear the large ones in half.

・Use mushrooms of your choice.
・You can omit the kelp and hawk claws.
・Olive oil can be substituted with your favorite oil.
・You can substitute rice vinegar with your favorite vinegar such as black vinegar or apple cider vinegar.
・If you don't have shirodashi, you can use mentsuyu or soy sauce instead.
・Beet sugar can be replaced with honey.
・If you wash the mushrooms with water, the flavor will be lost, so wipe them with a tightly wrung cloth.
