- てんさい糖 : 300g
- 水 : 150ml
- レモン汁 : 適量

Procedure

Cut fresh ginger

Scrape off any dirty or damaged parts of the fresh ginger with a spoon.
Slice thinly and transfer to pot. -

砂糖に漬ける

鍋にてんさい糖を加えて混ぜ、全体にまぶす。
30分~1時間漬けて水分を出す。 -

煮る

新生姜から水分が出たら、水とレモン汁を加えて混ぜて火にかける。
沸々したら弱火にし、アクを取りながら約30分煮詰める。
火を止めて粗熱を取る。 -

濾す

ザルで濾し、清潔な容器に移したら完成。
Point
Fresh ginger can be used as a substitute, but the spiciness and water content are different, so we recommend using fresh ginger.
・Beet sugar can be substituted with other sugars.
- Time spent soaking in sugar is not included in the total time.
You can omit the lemon juice if you like.
・An alternative variation is introduced in which powdered artificial sweetener is used instead of beet sugar, but it takes a long time for the moisture to come out in step 2 and the ginger syrup will crystallize, so it needs to be heated each time it is used.
-The fresh ginger remaining after straining can be eaten as is, but if you add a small amount of vinegar and salt, it can be pickled in sweet vinegar.
-Introduces ways to use it, such as adding it to cooking, sprinkling it on yogurt, and mixing it with carbonated water.
