Ingredients
- Chicken thigh : 1 piece (250g)

- こんにゃく : 1枚(250g)

Place the dried shiitake mushrooms and cold water in a bowl and refrigerate for half a day.

Tear the konnyaku into bite-size pieces.
Heat a frying pan and dry roast the konnyaku.
When it starts to shrink, turn off the heat and let the remaining heat evaporate the moisture.
Cut the burdock root into chunks and soak in water for 30 seconds.
Roughly chop the carrots and cut the bamboo shoots into bite-sized pieces.
Garnish the shiitake mushrooms.
Cut the chicken into bite-sized pieces.

Heat a frying pan with konnyaku, add oil, chicken and burdock and fry.
When the surface of the chicken turns white, add (A) and mix it all together.
Add sugar and mix.
Add (B) and simmer for 5 minutes.
When the flavors are familiar, add the dried shiitake mushrooms and the reconstituted dashi stock, cover with a drop lid, and simmer for 10 minutes.
Turn the ingredients upside down, cover with a drop lid, and reduce the heat to low and simmer for another 10 minutes.
Incorporate the broth for 2-3 minutes while stirring.
Finished on a plate.
Point
・Soak dried shiitake mushrooms for a day if they are whole, or for half a day if sliced. Work the day before or in the morning.
・You can tear the konnyaku with a spoon. The more you tear it, the more the flavor permeates.
・Konjac does not need to be boiled in salt. If you dry-roast and remove the moisture, the flavor will permeate and the smell will fly.
・Slice the burdock into chunks, leaving the thin parts intact and halving the thick parts.
・Don't soak burdock root in water for a long time as it loses flavor and nutrients.
・Separate chicken and burdock to add separately.
・If you add sugar and fry it, water will come out.
・ After simmering for 10 minutes, turn the ingredients upside down.
・The time required for rehydrating dried shiitake mushrooms and simmering time is not included in the required time.
