Make the yogurt batter

Place unsweetened yogurt in a bowl.
Separate the eggs into yolks and whites, add the yolks to a bowl of unsweetened yogurt, and place the whites in the refrigerator.
Mix unsweetened yogurt and egg yolks thoroughly with a rubber spatula.
Sift the pancake mix into the batter and mix well until just combined. -

Add 1/3 of the meringue to step 1 and mix well with a rubber spatula.
Add all the batter to the remaining bowl of meringue and fold in a cutting motion to combine. -

Pour the batter into a round mold covered with a high layer of parchment paper, and stir with a bamboo skewer to remove any air bubbles from the surface.
Place a slightly smaller heat-resistant dish on the baking sheet, place the round mold on top, and pour hot water (not included in the recipe) into the baking sheet.
Bake in a preheated oven at 160°C for 20 minutes, then reduce the temperature to 140°C and bake for 40 minutes.
Allow to cool, then remove from the round mold and it's done.
Point
-Preheat the oven to 160 degrees.
・A 15cm round shape is used.
・Medium-sized eggs are used.
-Mix the yogurt well until smooth before measuring.
Use cold eggs.
- Granulated sugar is used, but white sugar or brown sugar can also be used.
- When making meringue, whip at high speed at first and then reduce the speed halfway through to get a finer meringue.
