- 穀物酢 : 55g
- (A) water : 500g
- (A) salt : 40g

In a hot water bath, mix while warming to 60-65 degrees.
Add vinegar and mix gently for 3 minutes.
Strain through a sieve. -

When the water has cooled, discard it and fill it with hot water again to form the cheese.
Repeat 3-4 times.
Once formed, soak in a bowl of water for about 10 minutes to cool. -

Point
