- Maitake mushroom : moderate amount

Separate the maitake mushrooms by hand.
Remove the stalks at the base of the shimeji mushrooms and loosen them with your hands.
Remove the stems from the shiitake mushrooms and cut them into 5 mm wide pieces.
Thinly slice the shiitake mushroom stems.
Cut the garlic cloves in half lengthwise, remove the sprouts and cut into small pieces. -
