Ingredients

  • eggplant : Two
  • サラダ油 : 大さじ2
  • (A) water : 100ml
  • (A) Soy sauce : 大さじ1と1/2
  • (A) Mirin : 大さじ1と1/2
  • (A) sugar : 小さじ1
  • (A) Katakuriko : 小さじ1
  • 削り節 : 2g
  • 大根 : 150〜200g
  • 青ネギ : 適量
  • 生姜のすりおろし : 適量

Procedure

  1. 1) prepare the eggplant 01:02

    Cut off the stem part of the eggplant.
    Cut into long strips.

    Heat salad oil in a frying pan over medium heat.
    Add the eggplant and coat with salad oil.
    Grill the eggplant skin side down for 1-2 minutes.

    煮立ったら弱中火でとろみがつくまで2分煮る。
    大根を皮ごとすりおろす。
    おろした大根の水気を切ってフライパンに入れる。
    混ぜて1〜2分煮る。

    お皿に4を盛る。
    青ネギと生姜のすりおろしを乗せて完成。

Point

・Serving size for 2 people.
・If you are concerned, expose the eggplant to water (not listed) before baking.
・Do not add salad oil when grilling the eggplant as it will become oily.
・You can use dashi granules instead of kezuribushi.
・Cut the green onion into small pieces.
