Prepare the sardines

Cut off the head of the sardine, make a slit in the belly, scrape out the internal organs and wash them under running water.
Insert your thumb into the belly of the sardine and open your hand to remove the bones.
After cutting off the back bone and tail, remove the skin.
Cut the sardines and put them in a bowl, add soy sauce and mix. -

Pour the rice into a bowl, top with the seaweed, sardines, mentaiko, and green onions and it's done.
Point
・Salt water is good for washing sardines, but running water is also acceptable.
・When removing the skin in step 1, insert your thumb into the dorsal fin and pull to make it easier to peel off.
・The amount of soy sauce in Step 1 is just enough to add a light flavor.
・If you like, you can add egg yolk (not listed) or white sesame (not listed).
