Put bread crumbs in a bowl, add milk and mix.
Cut off the stems of the shiso leaves, cut into thick strips, and then roughly chop.
Cut off the stem of the shiitake mushroom, make a slit on the surface of the cap, then rotate it and make a slit diagonally.

Beat the eggs in a bowl. -

Pour vegetable oil into a frying pan and reduce heat to medium.
Arrange the shiitake mushrooms, flesh side down, add 1 tablespoon of water (not listed), cover, and steam-fry over low heat for 4 minutes.
Turn over and steam-fry on low heat for another 4 minutes.
Flip the shiitake mushrooms again, turn the heat to medium high and boil for 1 minute, then turn the mushrooms over and boil for 2 minutes.
When the broth is gone, put it in a bowl and it's done.
Point
・Ingredients: 6 to 8 shiitake mushrooms.
- Soaking the bread crumbs with milk will make them blend better with the meat.
- Adding mayonnaise and potato starch to the meat makes the meat tender and juicy.
・By applying egg wash to the inside of the shiitake mushroom, the flesh will be difficult to peel off.
・When stuffing the meat, trace the border between the meat and shiitake mushrooms with your finger to make sure they stick together perfectly.
・It's also delicious if you season it with salt and pepper after it's done.
