- (B) Mentsuyu : 大さじ3
- (B)Cooking sake : 大さじ3
- (B) Chicken soup base : 大さじ1
- (B)Kombucha : 大さじ1
- 白菜 : 300g
- 椎茸 : 3個
- 絹ごし豆腐 : 1/2丁
- ごま油 : 大さじ1/2
- 柚子胡椒 : 4cm

Wash the Chinese cabbage, cut off the root, and roughly chop.
Lightly wipe the shiitake mushrooms with a damp kitchen towel, cut off the stones, and make decorative cuts.
Turn the chicken wing skin side down and make two incisions along the bone. -

Finely chop the green onion.
Add minced chicken thighs and green onions to a bowl.
Finely chop the bevel cartilage and add to the bowl.
Add grated ginger and (A) and mix well. -

Heat salad oil in a pot and fry the chicken wings, skin side down, over medium heat.
When the chicken wings are browned, remove them.
Add (B) to the pot, mix well, and add the Chinese cabbage and shiitake mushrooms.
Cut silken tofu and add.
When the soup comes to a boil, shape the chicken meatballs with a spoon and add them.
Cover and simmer on low heat for 10 minutes. -

Add sesame oil and yuzu pepper to Step 3 and dissolve.
Point
・We use 2x concentrated mentsuyu.
・You can make it using your favorite vegetables.
・If you don't like sesame oil and yuzu pepper, you don't need to use them.
- If you want to prepare the Chinese cabbage carefully, separate the white part and the green part, then scrape the white part of the Chinese cabbage and roughly chop the green part.
- If you wash shiitake mushrooms, they will lose their umami and flavor.
・You can also process the cartilage in a food processor, but be careful not to grind it too finely or it will lose its texture.
・When using a clay pot, use a frying pan when frying the chicken wings to prevent cracks.
