(A)を混ぜ合わせてソースを作っておく。

じゃがいもは皮をむいて、芽があれば取り除き、2cm角に切る。水(分量外)をはったボウルに入れて5分間さらしておく。

Gently wash the potatoes and drain them. Place in a heat-resistant container, cover with plastic wrap, and poke several holes in the plastic wrap with a toothpick. Heat in a 600w microwave for 3 minutes.
Drain in a colander, drizzle with olive oil, and mix well to coat. Let stand for about 5 minutes and remove from heat. -

Crack the eggs into a bowl and beat them. In a separate container, mix together the bread crumbs and grated cheese.

Add flour and salt and pepper to a plastic bag and mix thoroughly. Add the potatoes from Step 3, shake well, and sprinkle the potatoes with flour.
Take out the potatoes and sprinkle them well with the egg and breadcrumbs from step 4 to coat them. -

Add frying oil to a frying pan and heat until it reaches 170 degrees.
Add potatoes and heat without stirring for 30 seconds to 1 minute. Cook until lightly browned, then turn over and cook for about 3 minutes until browned all over.
Put it in a vat and let it sit for about 3 minutes, then drain the oil. Complete by serving in a bowl. Serve with the sauce from step 1.
Point
・You can use any variety of potato you like. If you use Danshaku potatoes, they tend to crumble easily, so be careful not to crumble them when shaking the bag in step 4.
- Drizzle olive oil on the potatoes in step 3 to prevent them from sticking together. You can substitute your favorite oil.
・In step 4, add air to the plastic bag you put the potatoes in to make it swell, then shake it up and down.
- The approximate amount of oil for frying is 1cm from the bottom of the frying pan.
・The temperature of the frying oil (170 degrees) should be such that fine bubbles come out from the tip of the chopsticks when you put them in it.
・Be careful not to move the potatoes too soon after placing them in the oil, as the breadcrumbs will easily fall off.
・If you are frying the potatoes in multiple batches, remove the remaining bread crumbs before frying the next batch.
・The sauce has a sweet flavor, so you can adjust the taste by adding salt and pepper.
