Ingredients

  • beef steak meat : 200g
  • 塩 : ふたつまみ
  • しいたけ : 3個
  • サラダ油 : 大さじ1
  • sweet sake : 大さじ2
  • soy sauce : 大さじ1
  • (for sauce) sugar : 大さじ1/2
  • (beef steak) sugar : 小さじ1/2
  • 白髪ねぎ : 適量
  • 卵黄 : 1個分

Procedure

  1. 1) Preparing beef steak 01:44

    Insert a knife into the beef steak in 3 hidden places.
    Sprinkle salt on the beef steak.

  2. 2) しいたけの下処理をする 02:20

    しいたけの石づきを切り落とす。
    しいたけを半分に切る。
    しいたけのかさに1ヵ所隠し包丁を入れる。

  3. 3) make the sauce 02:57

    Place mirin in a small pot and bring to a boil over medium heat.
    Add soy sauce and sugar (for the sauce) and bring to a boil.

  4. 4) フライパンで焼く 03:35

    Pour salad oil into a frying pan and heat over medium heat.
    Grill the 2 shiitake mushrooms with their caps facing down.
    Add the beef steak from step 1 to the frying pan and sear both sides.
    Wipe the oil from the frying pan with kitchen paper.
    Sprinkle sugar on the grilled beef steak and cover with the sauce from Step 3.
    Bring to a simmer, turning the meat so that it is coated in the sauce.

  5. 5) 盛り付ける 06:16

    お皿に4の牛ステーキ肉としいたけを盛り付ける。

Point

・Make a 2mm incision on the surface, depending on the thickness of the beef steak.
- Boil the mirin until it turns yellow and the volume is reduced to about 2/3.
・Bake the shiitake mushrooms with their caps facing down to prevent moisture from escaping.
・If the beef steak is thick, cover the frying pan with a lid.
・When pouring sugar on beef steak, spread it on the side where you made the cut.
・When the sauce thickens, put it in a bowl.
