Make the dough

Separate the eggs into yolks and whites and place only the whites in a bowl.
Whisk while tilting the bowl, and when the mixture turns white, add 1/3 of the sugar and mix for about 1 minute.
Add half of the remaining sugar and mix for about 1 minute, then add the remaining sugar and mix in the same way.
Mix on low speed until foamy, then add the egg yolks and mix.
Add the milk and mix, then add the pancake mix and mix in a cutting motion with a rubber spatula.
Add the oil and mix until thoroughly combined. -

Place a bowl over a bowl of ice water (not included in the recipe), add (A) and whisk until stiff peaks form.
Peel the baking sheet off the dough, place it on another baking sheet, and then top with all the whipped cream.
Spread more cream on the front side and less on the back side, then slowly roll it up starting from the front side.
Spread any excess cream that has spilled out from the edges evenly, wrap it in baking parchment paper and secure with tape.
Place the rolled end face down on a flat container and chill in the refrigerator for 1 hour until hardened.
Once cut, arrange on a plate and you're done.
Point
・Preheat the oven to 180 degrees beforehand.
- When whipping the egg whites, you can finish whipping them when the whisk is held vertically and the peaks form a bow.
・If you don't have a commercially available roll cake mold, you can make a simple mold by stacking 6 sheets of newspaper, cutting them to the size of your baking tray plus 4cm, folding down the edges, securing the corners with a stapler, and then laying a sheet of cooking paper on top.
If the baking time is not enough, bake for an additional 2 minutes while keeping an eye on it.
- Once you have finished rolling the dough, hold down the edge of the baking paper and use a ruler or something similar to push the dough towards you to give it a shape.
