- 茄子 : 5本
- オクラ : 2パック
- 白ごま : 大さじ1/2
- 鷹の爪 : 1本
- (A)だし汁 : 300cc
- (A)醤油 : 75cc
- (A)酢 : 75cc
- (A)砂糖 : 大さじ4
- ごま油 : 適量

野菜の下処理をする

Cut off the stems of the okra.
Slice off the tough parts of the cut.
Sprinkle salt on the surface and rub it with a board to remove the fine hairs.
Set aside until use.
Slice the eggplant into 1cm thick slices. -

合わせ調味料を作る

鍋に(A)を入れる。
鷹の爪を手でちぎって加える。
火にかけてひと煮立ちさせる。 -

茄子を焼く

フライパンを火にかけてごま油を引く。
ナスを並べて置き、中火で両面に焼き色がつくまで焼く。
焼けたら2の鍋に入れる。 -

オクラを切る

オクラを水洗いして水気を切り、細かい輪切りにする。

漬け込む

オクラを2の鍋に加える。
白ごまを加え、冷蔵庫で1日漬け込んで完成。
Point
・だし汁は水と顆粒だしで代用できる。
・茄子は油を良く吸うため、ごま油は多めに引いて焼くとよい。
・オクラはなるべく細かく切るとよい。
・漬け込み時間は1時間ほどでもおいしく食べられるが、一日置いた方がより味が馴染む。
・冷蔵庫で3～4日日持ちするため、作り置き常備菜に便利。
