  • 塩 : 適量
  • 油 : 大さじ1
  • 長ネギ : 40g
  • (A) Sesame oil : 大さじ1
  • (A) Salt : 適量
  • (A) Sugar : 大さじ1/2
  • (A) Water : 大さじ1
  • (A) Vinegar : 大さじ1
  • (A) Soy sauce : 大さじ1
  • (A)コショウ : 適量

Procedure

  1. 1) Preparing the Fish 00:12

    Place the yellowtail between kitchen paper to remove moisture and remove the scales.
    Sprinkle salt all over and place in the fridge for 20 minutes.

    長ネギの上下に斜めに切り込みを入れ、みじん切りにする。

    1の表面に出てきた水分を、キッチンペーパーで拭き取る。
    フライパンを中火にかけ、油を入れる。
    ブリを皮目を下にして入れ、油が撥ね始めたら弱火にする。
    皮目に焼き色が付いたら裏返し、全ての面をフライパンに押し付けながら身を軽く焼き、火が通ったら取り出す。

  4. 4) ネギだれを作る 02:06

    フライパンに残った脂を拭き取り、2と(A)を加えて中火で加熱しよく混ぜる。
    沸騰したら味見をして火から下す。

  5. 5) 盛り付ける 02:40

    お皿に3を盛り付け、4をかけたら完成。

Point
