Ingredients

  • 米 : 2合
  • 鶏もも肉 : 1枚
  • 塩(鶏もも肉用) : ひとつまみ
  • ごま油 : 大さじ1/2
  • 舞茸 : 1パック
  • ごぼう : 50g
  • 人参 : 1/3本
  • ごぼう : 50g
  • 油揚げ : 1枚
  • Salt (for stir-frying) : ひとつまみ
  • (A)醤油 : 大さじ2
  • (A)みりん : 大さじ2
  • (A)料理酒 : 大さじ2
  • (A)冷水 : 310ml
  • 昆布 : 1枚
  • 粉山椒 : 適量

Procedure

  1. 1) 米を研ぐ 02:23

    米を水に浸けて、素早く流す。
    水に浸けて手で軽く混ぜるように洗うことを2~3回繰り返す。
    きれいな水に米を浸けて冷蔵庫で1時間浸水させる。

  2. 2) 切る 04:00

    人参を千切りにする。
    舞茸を揉みながら手で細かくちぎる。
    油揚げを1cm角に切る。
    ごぼうをささがきにする。
    鶏肉を身側に塩(鶏もも肉用)を振って馴染ませる。

  3. 3) 炒める 05:14

    Add sesame oil to a frying pan and heat over medium heat.
    Place the chicken thighs skin side down and grill.
    Add the chopped ingredients and salt (for stir-frying) to the open part of the frying pan.
    Stir-fry the ingredients, allowing the fat from the chicken thighs to soak into the ingredients.
    Once the skin of the chicken thighs has browned, remove them from the oven.
    Stir fry the remaining ingredients to remove the moisture.
    Remove the chicken thighs and cut them into small bite-sized pieces.

  4. 4) cook 07:05

    Place the soaked rice in a colander and drain for 5 minutes.
    Put rice in the clay pot.
    Add (A).
    Place the kelp on top and sprinkle 3 evenly over it.
    Cover and cook over medium heat for 10 minutes.
    Reduce heat to low and simmer for 15 minutes.
    Turn off the heat and let steam for 10 minutes.

  5. 5) 盛り付ける 08:46

    粉山椒を振りかけて切るように混ぜる。
    茶碗に盛り付けて完成。

Point

・If you don't have a clay pot, you can use a rice cooker.
・The seasoning is gentle and brings out the natural flavor of the ingredients, so if you want a stronger taste, you can add 1 tablespoon of noodle soup stock to (A).
- When washing the rice, be careful not to mix too vigorously with your hands as this can cause the rice to break.
- By frying the ingredients once before cooking, the aroma is brought out and the flavor is concentrated, making it delicious.
・Cooking rice using cold water will result in sweeter rice.
・If cooking in a rice cooker, add all ingredients (A) except for the cold water, then add cold water up to the 2 cups mark.
