Ingredients
- eggplant : 1 stick (100g)
- Beef and pork mince : 150g
- (A) Ketchup : 大さじ2
- (A) Worcestershire sauce : 大さじ1
- (A) Soy sauce : 大さじ1/2
- (A) Chili pepper : 適量
- レタス : 3枚ほど
- ミニトマト : 4個
- 細切りミックスチーズ : 20g
- ご飯 : 適量
- 乾燥パセリ : 適量
- 油 : 適量

Remove the stems from the eggplants and cut them into 1cm cubes.
Soak eggplant in water (not included in recipe) for 5 minutes.
Tear the lettuce into bite-sized pieces.
Remove the stems from the cherry tomatoes and cut them into 8 equal pieces.
Place eggplant in a colander to drain. -

Add oil to a frying pan and heat over medium heat.
Add the ground beef and pork and stir fry.
Once cooked and changed color, add eggplant and stir fry.
Once the eggplant is cooked, add (A).
Stir fry over medium to low heat until the water evaporates. -

Place the rice in a bowl.
Spread the lettuce all over.
Place the number 2 in the center.
Scatter cherry tomatoes around the edge.
Sprinkle with shredded mixed cheese.
Finish by sprinkling dried parsley on top.
Point
・Serves 2.
・Cherry tomatoes can be substituted with 1/2 a tomato.
・If you don't like spicy food, you can adjust the amount of chili pepper or leave it out.
- Use dried parsley to taste.
- You can easily make taco rice by using chili pepper instead of chili sauce.
