Ingredients

  • 茄子 : 2本
  • 玉ねぎ : 1/4個
  • にんじん : 適量
  • トマト : 1個

  • (A)ケチャップ : 2回し
  • (A)ウスターソース : 2回し
  • (A)唐辛子 : 適量
  • (A)ブラックペッパー : 3振り
  • (A)バジル粉 : 3振り
  • (A)カレールー : 適量
  • トマトジュース : 適量
  • ご飯 : 250g
  • 紅生姜 : お好み
  • グリーンピース : お好み

Procedure

  1. 1) 下準備をする 01:15

    茄子のヘタを取り、縦半分にし1~2㎝ほどの半月型に切る。
    切った茄子は、塩水(分量外)に漬けておく。
    にんじんと玉ねぎは、粗みじん切りにする。
    トマトはヘタを取り、一口大に切る。

  2. 2) 具材を炒める 03:30

    Add oil to a frying pan and mix well.
    Add the ground pork and grate the garlic and ginger into the pan.
    When the ground pork is cooked through, add the tomatoes, carrots, and onions from step 1 and stir fry.
    Once the vegetables are cooked, drain the eggplant from step 1 and add it.
    Stir fry the whole thing together.

    Add tomato juice to step 2.
    Simmer over medium heat for about 10 minutes.
    Turn off the heat, add (A) and stir.
    Turn the heat back on and simmer for 1 to 2 minutes, stirring until well combined.
    Serve the rice on a plate, top with the curry, and you're done.
    Garnish with pickled ginger and green peas if desired.

Point

・We recommend unsalted tomato juice.
- Soaking cut eggplant in slightly salted water will prevent it from discoloring.
- Adjust the amount of curry roux to match the amount of tomato juice.
・If there is too much curry roux, add tomato juice or water to adjust.
・Basil powder is optional.
