Ingredients
- 鮭 : 2切れ(180g)
- salt : 適量
- 薄力粉 : 適量
- Olive oil (for first addition) : 1 tablespoon
- (A) Olive oil (for later addition) : 大さじ1
- (A) Butter : 20g
- (B) Soy sauce : 大さじ1
- (B) Lemon juice : 小さじ1
- (B) Sugar : 小さじ1
- コショウ : 適量

Procedure

Prepare the salmon

Remove the bones from the salmon and wipe off any moisture on the surface with kitchen paper.
Sprinkle salt on both sides.
Dust both sides with flour and shake off excess flour. -

Add olive oil (for first addition) to a frying pan, place the salmon skin side down, and heat over medium heat.
When you hear a crackling sound, reduce the heat to low and heat.
Once the skin has browned, lightly heat the surface and when it changes color, turn off the heat.
Wipe off excess oil with kitchen paper, add (A) and place over low heat.
Once the butter has melted, scoop some with a spoon and pour it over the salmon while heating.
Once the salmon is cooked, place it on a plate. -
