Preparing the frozen udon noodles

Place the frozen udon in a heat-resistant container and microwave for the specified time.
Prepare a bowl of ice water (not included in the recipe), place a colander on top, and add the thawed frozen udon noodles.
Mix well with your hands, chill the frozen udon thoroughly, drain well and transfer to a bowl. -

Point
・You can use somen noodles instead of udon.
- You can also use myoga ginger or shiso leaves instead of chopped green onions for a delicious dish.
・Salted kelp can be substituted with 1/2 teaspoon of kelp tea.
・Fish meal used includes bonito meal, shaved fish meal, and dashi powder.
- Adding the egg whites first and mixing well will make it easier to swallow.
