Ingredients

  • 鶏もも肉 : 1/2枚
  • 長ネギ : 1本
  • 生そば : 2玉
  • 酒 : 大さじ2
  • 生そばに付属のめんつゆ(つけつゆの濃さ) : 120ml
  • (A)水 : 100~120ml
  • (A)醤油 : 大さじ1
  • (A)みりん : 大さじ1
  • (B)ゆずの皮 : 適量
  • (B)七味唐辛子 : 適量

Procedure

  1. 1) 下ごしらえをする 01:01

    For long onions, cut off the root and the blue part, cut 5 cm into small pieces, and use them as condiments.
    Cut the rest of the green onions into pieces at 3 cm intervals.
    Cut chicken thighs in half.

  2. 2) 鶏もも肉と長ネギを焼く 01:45

    Heat a frying pan over medium heat, stretch the chicken thighs, and bake for about 2 minutes with the lenticels down.
    When the chicken thigh oil comes out, add chopped green onions and bake for 2-3 minutes.
    Turn the green onions over and bake the other side.
    When the skin of the chicken thigh is browned, turn it over and turn off the heat.

  3. 3) 煮る 04:04

    2に、酒と付属のめんつゆを入れて、再度火をつける。
    (A)を入れて、煮立ったら、蓋をして弱火で5~6分煮る。
    鶏もも肉を取り出して一口大に切り、再びフライパンに戻して1分程度煮る。

  4. 4) そばを茹でる 06:00

    鍋で生そばを茹でる。
    茹でたそばを、流水で締める。

  5. 5) 仕上げる 06:42

    器に、そばを盛り付ける。
    薬味の長ネギと(B)、3を器に盛り付けて、完成。

Point

・油をひかずに焼くことで、つゆが油っこくならない。
・鶏もも肉の皮目と長ネギは、焼き色がつくまでしっかり焼く。
・家にあるめんつゆを、つけつゆの濃さにして使っても良い。
・そばは「の」の字を描いて茹でると、美味しく仕上がる。
・お好みで、三つ葉を薬味に入れても良い。
