- (A) Granule dashi stock : 1g
- (A) Sugar : 7.5g
- (A)塩 : 2.5g
- (A)ディジョンマスタード : 16.5g
- グレープシードオイル : 110ml
- 米酢 : 9.5g
- (B)塩 : 少々
- (B)砂糖 : 小さじ1~2
- 無塩バター : 大さじ2

                        Put egg yolk and (A) in a bowl and mix. 
 Add grape seed oil little by little and mix each time.
 Add rice vinegar, mix, put in a container and cool in the refrigerator.
