・ When the green onions are put on the processor, water will come out, so chop them with a kitchen knife. Make several vertical cuts with a kitchen knife, cut from the edges and chop. Alternatively, make thin, diagonal cuts on both sides (do not cut to the bottom), cut from the edges and chop.
・ Although green onions are also used, check carefully as the soil tends to accumulate.
・ Cotton tofu is harder to crumble than silk tofu. Cut cotton tofu into 3 equal parts from the side with a kitchen knife, and cut into 5 equal parts from the top and 6 equal parts in the vertical direction to make about 2 to 3 cm square.
・ By boiling the cotton tofu, the water in the tofu is removed, the seasoning is easily added, and the tofu is less likely to crumble. Be careful with tofu, as if it is boiled too much, it will have holes and will not taste good.

・ The water to be added with the seasoning evaporates during frying, so you can add more water.
・ If you boil the cotton tofu and leave it for a while, the tofu will stick to each other, so it is better to boil it just before putting it in the frying pan.
・ When adding water-soluble potato starch, if you add it over high heat, the starch will tend to harden, so reduce or turn off the heat.
・ Because it is for children, it is thicker. By boiling the tofu, the tofu does not crumble easily and contains carrots, which increases the sweetness.
