Ingredients
- Ground meat : 250g
- onion : 1/2 piece
- Lotus root (grated) : 70g
- Lotus root (for putting on hamburger steak) : 8 slices
- (B) Bread crumbs : 4 tbsp
- (B) Egg : 1 piece
- (B) Mayonnaise : 1 tablespoon
- (A) Salt : 適量
- (A) Pepper : 適量
- Starch : 適量
- Salad oil : Appropriate amount
- (C) Soy sauce : 大さじ2
- (C) Mirin : 2 tablespoons
- (C) Cooking sake : 大さじ1
- (C)砂糖 : 大さじ1

Procedure

Prepare the onions

Finely chop the onions and place in a heat-resistant bowl.
Lightly cover with plastic wrap and heat in a 600W microwave for 1 minute to remove the rough heat. -

Prepare lotus root

Peel the lotus root, put it in a bowl of water, remove the lye for 10 minutes, and grate it.
Cut the lotus root to be placed on the hamburger into thin slices with a width of 5 mm.
Place in a bowl of water and remove the lye for 10 minutes.
Drain the water and wipe off the water with kitchen paper. -

Add 2 grated lotus root, (B) and 1 onion, knead and divide into 8 equal parts. -

フライパンで焼く

フライパンにサラダ油をひき、中火で30秒温める。
火を止め、4のレンコン側を下にし、焼き色がつくまで弱中火で2~3分焼く。
裏返し、分量外の水大さじ1を入れ、蓋をして弱火で3~5分蒸し焼きする。
5の合わせ調味料を回し入れ、弱中火でとろみがつくまで2分煮詰めて完成。
Point
・ Amount for 8 pieces.
・ Minced chicken can be used as a substitute.
・ After removing the lotus root lye, wipe off the water.
・ When adding onions to the meat, remove the heat before adding.
・ When forming meat shavings, apply salad oil to your hands to make it easier to work without touching your hands.
・ If you put lotus root on the meat, it is good to put it with the lotus root side down.
・ It is better to boil the hamburger steak while turning it over in step 6.
・ Adding lotus root to the meat will improve the texture.
