- (A) Saikyo miso : 大さじ3
- (A) Mirin : 大さじ4
- (A) Yuzu pepper : 小さじ1

Put (A) in a ziplock bag and knead from the top of the bag to mix.
Add the chicken thighs and knead again from the top of the bag to mix.
Squeeze the air out of the ziplock and seal it. -

Wipe off the miso from the chicken thighs.
Pour oil (not listed) in a frying pan, heat over medium heat, add chicken thighs skin side down, and heat.
Bake for about 3 minutes, then turn the chicken thighs over and cook through.
After about 2 minutes, cover with a lid and steam for another 3 minutes.
Set the heat to medium heat and bake while flipping it over to make the surface brown.
