Ingredients
- cabbage : 350g
- 塩 : 小さじ1/2
- 砂糖 : 大さじ1/2
- (A) lemon juice : 大さじ1/2
- (A) Vinegar : 大さじ1
- (A) Soy sauce : 大さじ1
- (A) Chicken bone soup base : 小さじ1/2
- (A) dried bonito : 3g
- 白ごま : 大さじ1/2
- 唐辛子 : 1本

Remove the core of the cabbage and tear off the leaves.
Finely chop the core.
Put in a large storage bag.
Add salt and shake to coat.
Rub while holding down.
Spread it out flat, remove the air, and close the opening of the storage bag.
Put it on the bat and put a weight on it.
If there is air in the storage bag, pull it out.
Let stand at room temperature for 30 minutes.
Cut the pepper in half, remove the seeds and cut into rings. -

Squeeze the water out of the cabbage from step 1 and put it in a bowl.
Add sugar and knead.
Add the chili peppers from (A) and 1 and mix well.
Drain the water from the storage bag of 1 and put it in.
Add white sesame seeds and mix.
Squeeze out all the air and close the opening of the storage bag.
Soak in the refrigerator for 5 minutes.
Finished on a plate.
Point
・By tearing the cabbage into large pieces, the familiarity of the taste becomes better.
・Squeeze out the water from the cabbage so that the taste does not become diluted.
・Adding sugar with other seasonings will reduce the penetration of the taste, so mix them first.
・After marinating, you can add sesame oil if you like.
・If you don't like spicy food, you can omit it.
