Prepare the sardines

Remove blood with a toothbrush and wash with running water.

Remove the abdominal bone with a kitchen knife, put your thumb between the meat and the skin around the fin and peel off the skin. -

Point
・It is better to prepare a special toothbrush for scraping out the blood in step 1.
・When opening your hands in step 1, be careful not to prick your fingers with small bones.
・The white sesame seeds in Step 2 tend to burn easily if the heat is strong, so it is better to turn the heat down to a low level and move the pan away from the heat occasionally.
・You can arrange it for ochazuke as you like.
・If you don't have a mortar, chop the toasted white sesame with a knife.
