Cut off the stem of the eggplant and peel off the skin with a peeler.
Cut the meat in half horizontally and cut into 1 cm square sticks. -

Add salad oil to a frying pan and heat over medium heat. Add the eggplant skins skin side down and fry for 3 minutes.
Wrap eggplant meat in kitchen paper and wipe off excess moisture.
