Ingredients
- (A) water : 1.5ℓ
- (A)小さい煮干 : 130g
- (A)大きい煮干 : 90g
- (A)昆布 : 5g
- (A)カツオ厚削り : 10g
- (A) Green part of white leek : 5g
- (A)ニンニク : 1片
- (B)薄口醤油 : 75㏄
- (B)砂糖 : 5g
- (B)濃口 : 25㏄
- (B)みりん : 5g
- サラダ油 : 5㏄
- 氷 : 3個

スープをつくる

Put (A) in a pan and heat over high heat.
After boiling, reduce heat to low and simmer for 20 minutes.
Strain with a colander and press down on the ingredients with a wooden spatula to strain the soup.
Fill a bowl with ice water and cool the pot containing the soup. -

麺を茹でる

流水をかけながら麺のぬめりをとる。
ステンレスカップに氷水をつくる。
ステンレスカップにザルに入った麺を入れ手で混ぜながら冷やす。 -
