Prepare the yam

Roast the roots of the yam over an open flame and remove.
Wash the yam under running water, put it in a plastic bag, and pound it with a noodle stick to make bite-sized pieces. -

Slice the garlic.
Cut the pork belly slices into 2cm to 3cm wide pieces. -

Set the frying pan to medium heat and add the pork belly slices.
Add (A) to a plastic bag and mix.
When the pork belly slices are cooked through, add the garlic and stir-fry further.
When it's about 70% cooked, add everything in the plastic bag and stir-fry until the water evaporates.
Turn off the heat and add black pepper. -

Point
・You can also remove the roots of the yam by burning them with a lighter or rubbing them with the back of a knife.
・It is good to use Japanese yam with the skin on as it gives a better texture and provides more nutrients.
・If there is any discolored part of the yam in step 1, cut it off.
・You can use a garlic tube or add ginger.
・Pork belly slices can be substituted with pork slices or chicken thighs.
・We use a 2x concentrated type of noodle soup.
- Garlic burns easily, so add it after slicing the pork belly.
・You can arrange it as you like, such as adding chives and stir-frying, or adding chili pepper or chili oil.
