Preparing frozen peeled shrimp and vegetables

Put frozen peeled shrimp in a bowl, add water (not listed), and salt (for thawing frozen peeled shrimp) to thaw.
Finely chop the green onion and ginger, and remove the buds from the garlic and chop finely.
Drain the thawed frozen peeled shrimp and place them in a bowl.
Add (A) and mix well, then wash with water.
Arrange them on kitchen paper, cover with kitchen paper and wipe off the moisture.
Season with salt and pepper and sprinkle with potato starch (not listed) all over.
Put (B) in another bowl and stir well to make a water-soluble potato starch. -

Add salad oil to a frying pan and heat over medium heat.
Warm it up for about 30 seconds, then reduce the heat to medium-low and add the frozen peeled shrimp from step 1.
Return to medium heat and fry for about 1 minute and 30 seconds on both sides, then turn off the heat and take out in a vat. -

Add (C) and stir-fry over medium heat for about 30 to 40 seconds, then add water (for the sauce), bring to a boil, and heat for 1 minute. -

・The frozen peeled shrimp in the video is about 200g.
- Thawing frozen peeled shrimp in salt water makes the shrimp crispy.
・Be sure to remove the odor from the frozen peeled shrimp in step 1, as this will also remove dirt at the same time.
・If the frozen peeled shrimp has any devein, be sure to remove it.
・By coating the shrimp with potato starch and frying, you can lock in the flavor of the shrimp.
・Frozen peeled shrimp will become hard if overcooked, so put them in a frying pan and remove from the heat once they are 70% cooked.
・By pasteurizing only the sauce, the richness and mellowness are increased.
・If you add vinegar halfway through, the sourness and refreshing taste will be lost, so add it at the end.
・Be sure to turn off the heat before adding the water-soluble potato starch.
