Ingredients
- eggplant : 5 pieces
- オクラ : 1パック
- 鶏ムネ挽肉 : 150g
- (A)Water : 1000㏄
- (A) Dashi pack : 2パック
- miso : 大さじ6~7
- ごま油 : 少々
- 万能ネギ : 適量

Procedure

Cut off the tip and stem of the okra, peel off the black part with a knife, and cut it in half diagonally.
Trim the stems from the eggplant and cut into thick rounds. -

Heat sesame oil in a deep frying pan over medium heat and add the eggplant.
Once both sides are browned, take them out. -

Add sesame oil to a frying pan, stir-fry the ground chicken breast, and when the heat goes through, add (A) and simmer for 2 to 3 minutes, skimming off the scum.

Add the eggplant back in and simmer for 2-3 minutes, then add the okra and miso and cook gently.
Serve in a bowl and top with green onions to complete.
Point
・If you don't have a dashi pack, you can use granulated dashi instead.
- For a better look, use a peeler or similar tool to cut the eggplants in 3 or 4 places vertically.
・In the video, ground chicken breast is used, but you can also use pork.
・Amount of miso is 1 tablespoon per serving.
・You can add shichimi chili pepper if you like.
