Cut the shiitake mushrooms.
Prepare a plastic bag, add (A) and mix.
Once mixed, add the shiitake mushrooms and shiitake stems and shake to mix well.
Finally, rub it in with your hands to blend it in. -

Put potato starch in a vat and sprinkle with shiitake mushrooms.

Add oil to a frying pan and heat to 170℃.
Fry the shiitake mushrooms from the inside for 1 minute.
Flip and fry for 2 minutes to air out.
Take it out, drain the oil, and serve it.
Point
・Use refined sake rather than cooking sake.
・Cut off the stems of the shiitake mushrooms and cut them in half. If the shiitake mushrooms are large, cut them into quarters.
・Cut off the tip of the stem of the shiitake mushroom before use.
・Step 2: After coating the shiitake mushrooms with potato starch, shake them with your hands to remove any excess powder.
・For step 3, add about 1.5cm of oil from the bottom.
・In step 3, do not touch the batter for 1 minute after you start frying, as it tends to stick.
・Step 3 creates a double-frying effect by exposing it to air.
