Ingredients
- Shiitake mushroom : 50g
- しめじ : 100g
- 舞茸 : 100g
- えのき : 100g
- ちくわ : 4本
- 玉ねぎ : 1/2個
- ニンニク : 1片
- 唐辛子 : 1本
- (A)Water : 80ml
- (A) Sugar : 大さじ1
- (A)Mirin : 50ml
- (B) Soy sauce : 70ml
- (B) Vinegar : 50ml
- 黒胡椒 : 小さじ1/4
- ごま油 : 大さじ1

Procedure

Slice the onion thinly.
Put it in a bowl filled with water (not listed) and leave it exposed. -

Cut the chikuwa diagonally into 5mm width pieces.
Slice the shiitake mushrooms into 5mm pieces.
Cut off the tough bottom part of the shiitake mushroom stem and slice.
Cut off the roots of the shimeji mushrooms and loosen them with your hands.
Loosen the maitake mushrooms by hand.
Cut off the ends of the enoki mushrooms and loosen them with your hands.
Cut off the bottom black part of the enoki mushrooms and loosen them with your hands. -

Prepare the aromatic vegetables

After slicing the garlic, remove the sprouts with a toothpick.
Remove seeds from chili pepper and cut into rounds.
Drain the water in a colander and wipe off the water with kitchen paper. -

Add sesame oil to a frying pan and heat over medium heat.
Sprinkle sesame oil all over the frying pan.
Place the mushrooms from step 4 in a frying pan and stir-fry over medium-high heat to coat them with sesame oil.
When it starts to brown, stir fry.
Add the garlic from Step 3 and the chikuwa from Step 2 and stir-fry.
Spread the ingredients all over the frying pan and fry for 1 minute, then turn off the heat.
Add the onions from Step 3 and mix for 30 seconds.
Transfer to a storage container. -

Put (A) into a frying pan and heat over medium heat.
Bring to a boil while stirring.
Add (B), heat while stirring, and turn off the heat just before it boils.
Add the chili pepper and black pepper from step 3 and mix. -

全体に5が行き渡るように混ぜる。
表面にラップをかけて粗熱を取る。
粗熱が取れたら完成。
Point
・Ingredients are for 4 people.

・The amount of chikuwa should be approximate.
・Although grain vinegar is used in the video, rice vinegar may also be used.
・If children are eating it, you can omit the black pepper.
・Be sure to remove garlic sprouts as they can cause acrid taste.
・Gently cook the onions in the residual heat.
- Taste the dipping sauce and if it seems too strong, add boiling water to dilute the flavor.
