Prepare the ingredients

Remove the outer leaves of the spring cabbage, cut off the core, and tear the leaves into bite-sized pieces with your hands.
Cut the stem into thin strips with a knife.
Transfer to a colander, rinse and drain.
Cut one silken tofu into 10 equal pieces, transfer to a plastic bag, and coat with potato starch.
Crush the ginger with the flat side of a knife and finely chop it. -
