- なす : 5本
- 水 : 400ml
- だしパック : 1袋
- (A) Soy sauce : 50ml
- (A) Mirin : 50ml
- (A) Sugar : 小さじ1
- (A) Grated ginger : 10~15g

鍋に水、だしパックを入れて10分浸けておく。

Place on a heat-resistant plate and microwave at 600W for 5 minutes.

Add oil (not included in the recipe) and mix well.
Place the eggplants skin side down and grill.

Cook until browned on both sides and then place in a Tupperware container. -

Point
- Eggplants with thorns at the stem are fresh, so use this as a guide when selecting eggplants.
- If you wrap it in plastic wrap and heat it in the microwave, it will taste like steamed food.
- By heating the eggplant in the microwave and then frying it in a frying pan, it will not absorb too much oil.
- The flavor of the stock is best brought out by simmering it for a long time, so simmer it over low heat.
-When arranging the grilled eggplants in the Tupperware, pick each one up with chopsticks to avoid getting any of the oil remaining in the frying pan on them.
-You can also let it cool and then chill it in the refrigerator before eating.
-It will keep for 2-3 days in the refrigerator, so it's convenient to prepare in advance.
・Leftover dipping sauce can be used as stock for soba noodles.
