Sprinkle sugar (for seasoning) on cubed pork and rub with hands.
Once the sugar is incorporated, add (A) and knead with your hands.
Cover the surface with plastic wrap and let sit at room temperature for 5 to 10 minutes. -

Cut off the stems of the shiitake mushrooms, separate the stems, and cut the caps into quarters.

Transfer the carrots to a heat-resistant container, lightly cover with plastic wrap, microwave at 600W for 1 minute, then wipe off any moisture. -

Add salad oil to a frying pan until it is 1 to 1.5 cm high from the bottom, and heat over medium heat to 170°C.
Add the carrots and fry, then after 1 minute add the onions, bell peppers and shiitake mushrooms and increase the heat.
After about 1 minute, remove from heat and drain.
Place the cubed pork in 170 degree oil and turn it over after about 1 minute.
Fry for 3 to 4 minutes, then remove from the oven and drain the oil. -

別のフライパンにタレを入れ、混ぜながら中火で加熱する。
固まってきたら素早く混ぜ、とろみがついたら一旦火を止める。
野菜と豚肉の角切りを加え、中火にかけて絡める。
沸騰したらごま油を加えて混ぜたら完成。
Point
・The amount shown is enough for 2-3 people.
- You can add boiled bamboo shoots and paprika to taste.
- The sugar is rubbed in first to add flavor, and sake is used instead of cooking sake.
- If you fry the cubed pork first, the oil will get dirty, so it's best to fry the vegetables first.
- 170 degrees is the recommended temperature when you dip chopsticks in water and small bubbles start to appear from the tip.
- Be sure to wipe off any moisture from the carrots to prevent oil splattering.
