Ingredients

  • 大葉 : 33枚
  • ミックスナッツ : 50g
  • (A) Miso : 50g
  • (A) Sugar : 20g
  • (A) Mirin : 20g
  • (A) Potato starch : 20g
  • (A) Sesame : 10g

Procedure

  1. 1) Add ingredients 02:01

    Put (A) in a small frying pan.

  2. 2) ミックスナッツを切る 03:08

    ミックスナッツを包丁で適当な大きさに切り、フライパンに加える。

  3. 3) ナッツ味噌を作る 04:00

    フライパンの中身よゴムベラでよく混ぜ合わせる。
    やや弱い中火にかけ、焦げないよう混ぜながら加熱する。
    水分が飛んで焦げそうになったら弱火にして混ぜながら加熱し、硬めのひと固まりになったら火を止めて粗熱を取る。

  4. 4) 巻く 05:12

    よく洗って乾燥させて大葉の軸を切り落とす。
    大葉の裏面を上にし、3を5~6g乗せて巻く。
    3個を1~2本の爪楊枝で止める。

  5. 5) 揚げる 07:15

    フライパンに少量の油(分量外)を入れ、中火にかける。
    140~160度に温まったら、4を入れて揚げる。
    約50秒経過したら裏返す。
    裏面も約50秒揚げたら引き上げ、油を切ったら完成。

Point

Use unflavored mixed nuts.
・Use miso that does not contain dashi.
・Made with real mirin.
・We use cane sugar, but you can use whatever sugar you like.
You can add chili pepper if you like.
-You can also place the mixed nuts in a sturdy bag and pound them.
If you can't dry the shiso leaves in time, you can wipe them off with a paper towel.
