Ingredients
- Cucumber : 4 bottles
- 塩 : 小さじ1
- 長芋 : 250g
- めんつゆ(3倍濃縮) : 60ml
- 鷹の爪 : 1~2本

Preparing the Cucumbers

Rub the salt into the cucumbers thoroughly.
Cut off the stem, cut into thirds, then cut into 4 pieces lengthwise.
Place in a plastic bag and leave for 30 minutes. -

Cut the yam

Peel the skin of the yam.
Cut into strips about the same length as the cucumber and cut into 1cm strips. -

Cut the hawk's claws

Remove the seeds and slice into thin rings.

Squeeze the water out of the cucumber in step 1 thoroughly.
Add 2 and 3 to a plastic bag.
Add the mentsuyu (3x concentrated) and mix.
Chill in the refrigerator for 4 hours and it's done.
Point
・It's a simple and delicious pickle that just requires cutting and pickling.
*The required time does not include the time it takes to salt the food or chill it in the refrigerator.
- In step 4, mix the ingredients while they are soaking to ensure that the flavor is evenly distributed.
・You can choose not to add the chili pepper in step 3 if you prefer.
