- eggplant : 3 bottles
- 塩 : 大さじ1
- 生姜 : Appropriate amount
- (A) Red shiso sprinkles : 大さじ2
- (A) Vinegar : 大さじ4
- (A) Mirin : 大さじ3
- (A) Sugar : 小さじ1
- (A) Alcohol : 大さじ3

Wash the eggplant.
Remove the stem of the eggplant and cut it in half lengthwise.
Cut the eggplant into 2-3cm pieces and soak in water (not included in the recipe).
Soak for 1 minute and drain in a colander.
Place eggplant in bag.
Add salt and shake.
Squeeze out the air, tie the bag, place on a plate and let sit for 30 minutes. -

Slice the ginger thinly and cut into julienne strips.
