- Pork shoulder loin : 420g
- 塩 : 4.2g
- (A)だし汁 : 適量
- (A)濃口醤油 : だし汁の10%
- (A)生姜スライス : 5枚
- (A)ニンニク : 3欠分
- (A)ネギ : 適量
- (A)中華だし : 大さじ1
- きゅうり : 2本
- そうめん : 3束
- そうめんつゆ : 適量
- 白ごま : 適量

Make the char siu

Sprinkle salt on pork shoulder.
Place the pork shoulder in a frying pan and sear both sides and the sides.
Place pork shoulder in pot.
Put (A) into the pot.
Cook over medium heat for 15 minutes, then cover with aluminum foil.
Simmer for a total of 1 hour until the liquid is reduced and then turn off the heat. -

Cut the cucumber

Remove the stems of the cucumbers and peel them.
Slice the cucumber into thin strips.
Soak the cucumber in ice water (not included in the recipe) for 10 minutes. -

お湯(分量外)にそうめんを入れて茹でる。
沸いたら火をとめて10分置く。 -

盛り付ける

Put somen noodle soup and broth from the roasted pork into a plate.
Place the somen noodles on a plate.
On a separate plate, place the cucumber and pork slices and mix.
Pour the broth from the char siu over the cucumber and char siu.
Finish by sprinkling white sesame seeds on top.
Point
・Use a whole piece of pork shoulder loin.
- Add enough stock to cover the pork shoulder.
・Use the green part of the green onion.
- You can also peel the cucumber using a grater.
・You can sprinkle chili pepper on the somen noodles if you like.
-If you like, you can add chili oil to the cucumber and pork slices.
