Ingredients
- 鶏もも肉 : 250g
- しめじ : 1/2株
- ピーマン : 1~2個
- パクチー : 2株
- (A) Finely chopped garlic : 1片
- (A) Finely chopped ginger : 1片
- (B) Curry powder : 小さじ2
- (B) Fish sauce : 1 tablespoon
- (C) Sake : 大さじ2
- (C) Sugar : 小さじ2
- (C) Coconut milk : 1カップ
- (C) Water : 1カップ
- Red pepper : 1本
- サラダ油 : 大さじ2
- レモン汁 : 大さじ1
- ナンプラー : 大さじ1/2
- 塩 : 適量
- 粗挽き黒胡椒 : 適量
- ご飯 : 適量

Procedure

Prepare the ingredients

Chop the coriander leaves and reserve for topping.
Gently scrape off the roots with a knife and chop the rest into small pieces.
Cut the peppers in half lengthwise, remove the seeds and pulp, and slice lengthwise into thin strips.
Cut off the stems of the shimeji mushrooms and separate them into small clusters. -

Add salad oil and (A) to a frying pan and fry over low heat for 2 minutes.
Add finely chopped coriander and stir fry lightly.
Once the aroma comes out, add (B) and stir fry.
When the powder from step 2 has evaporated and the aroma is released, add the chicken thighs and stir fry. -

When the color of the chicken thighs from step 2 has changed, add (C) and the halved red chili pepper and mix.
Once boiling, simmer over medium heat for 5 minutes.
Add the shimeji mushrooms and bell peppers and simmer for 5 minutes. -

ナンプラーを加えて混ぜる。 -

Place 4 on a plate, sprinkle with salt and coarsely ground black pepper, and garnish with coriander leaves.
Finish by serving the rice on a separate plate.
Point
・The amount shown is for two people.
Prepare hot rice.
・The chicken thighs used are those used for deep frying.
-You can substitute shimeji mushrooms with your favorite mushrooms.
・Coriander roots can be eaten.
- You can leave out the coriander if you like, but it won't turn green.
At the end of step 4, taste the sauce and add more fish sauce, lemon juice, or sugar to taste.
