Ingredients

  • 茄子 : 3本
  • 油 : 大さじ4
  • 塩 : 適量
  • 長ねぎ : 20g
  • 生姜 : 10g
  • ごま油 : 大さじ1
  • (A)水 : 大さじ2
  • (A)砂糖 : 大さじ1
  • (A)醤油 : 大さじ1
  • (A)酢 : 大さじ1
  • (A)中濃ソース : 大さじ1

Procedure

  1. 1) 具材を切る 00:15

    茄子のヘタを切り落とす。
    縦半分に切り、皮に格子状の切れ目を入れる。
    長ねぎ、生姜をみじん切りにする。

  2. 2) 茄子を焼く 01:19

    Place a frying pan over medium heat and add oil.
    Place the eggplant skin side down in the frying pan and when you hear it sizzling, reduce the heat to low.
    Cover with aluminum foil and bake.
    When the skin is browned, flip it over.
    Add a splash of oil (not included in the recipe), cover again and cook.
    When the white part is browned, flip it over.
    Sprinkle with salt, remove the eggplant and place on a plate.

Point

・茄子は弱火で時間をかけて焼くと、中まで柔らかくなる。
・茄子の皮から焼くことで油を吸わせすぎずに焼き上がる。
・茄子の皮目に格子状に切れ目を入れると味が染み込みやすい。
・ソースをひと煮立ちさせたら味見をして、好みの濃度に調整するとよい。
