Ingredients

  • みょうが : 1個
  • 青じそ : 4~5枚
  • 油揚げ : 1枚
  • ナス : 2本
  • (A) Sesame oil : 大さじ1
  • (A) Salad oil : 大さじ1
  • (B) Water : 200ml
  • (B) Noodle soup : 80~100ml
  • (B) Sugar : 小さじ2
  • そうめん : 2束
  • 生姜のすりおろし : 1片分

Procedure

  1. 1) Cutting the material 01:05

    Chop the myoga ginger into small pieces.
    Thinly slice the green shiso leaves.
    Cut the fried tofu into 4 equal triangles.
    Cut off the stem of the eggplant, cut it into 4 equal parts lengthwise, and make an incision along the skin.

  2. 2) ナスを焼く 02:46

    フライパンに(A)を入れて中火にかける。
    ナスを加えて混ぜ、全体に油を馴染ませる。
    皮目を下にして並べ、2分焼く。
    焼き色がついたら返し、全面に焼き色がつくまで焼く。

  3. 3) 出汁を煮る 04:00

    2に(B)を入れて加熱する。
    ひと煮立ちしたら、油揚げを加え火を弱めて2~3分煮る。

  4. 4) そうめんを茹でる 05:03

    鍋に水(分量外)を入れて沸騰させる。
    そうめんを入れて、1分茹でたらザルにあける。
    流水でよく揉み洗いする。
    水気をよく絞る。

  5. 5) そうめんを出汁に入れる 05:40

    3に4を加え、素早く混ぜて30秒煮る。
    味が馴染んだら火からおろす。

  6. 6) 盛り付ける 06:05

    5のそうめんをお皿に盛り付け、油揚げとナスを上に乗せる。
    みょうが、青じそ、生姜すりおろしをトッピングしたら完成。

Point

・The amount shown is for two people.
・The noodle soup used is twice as concentrated.
・We use fried tofu without draining the oil, but you can drain the oil if you like.
- The eggplant is not soaked in water as it will be cut and grilled immediately, but you can soak it in water if you like.
-Adding sesame oil to salad oil will give it a nice flavor.
- If you coat the eggplant in oil before grilling, it will turn out nicely browned.
