Ingredients
- New ginger : 200g
- Salt (for ginger) : 2 tsp
- Red plum vinegar : 200ml
- mustard : 1 tsp
- Salt (for mayonnaise) : 1/2 teaspoon
- Apple cider vinegar : 1 tablespoon
- Maple syrup : 1 tsp
- Soy milk : 50ml
- Avocado oil : 100ml
- King trumpet : 50g
- Soy sauce : 2 tsp
- Dried shiitake mushrooms : 3g
- kelp : 2g
- flour : 100g
- rice flour : 20g
- Baking powder : 1/2 teaspoon
- water : 300ml
- Leek : 30g
- Worcestershire sauce : Appropriate amount
- Sea lettuce seaweed : Appropriate amount

Slice the ginger thinly, sprinkle with salt and weigh it, then leave it for about an hour.
Squeeze the water into thin strips and soak in red plum vinegar. -

In a blender, stir mustard, salt, apple cider vinegar, maple syrup, and soy milk, add oil and mix until thick.

Cut the trumpet mushrooms into bite-sized pieces, add oil to a frying pan, fry, and entangle with soy sauce.

In a bowl, add dried shiitake mushrooms powdered with a blender, kelp, wheat flour, rice flour, baking powder, and water and mix.

Point
The time required to put the new ginger in salt and soak it in red plum vinegar is not included in the required time.
Mayonnaise is made by adding ingredients, stirring with a blender, and thickening.
The green onions are used by cutting the blue part into small pieces.
