Ingredients
- Minced pork : 200g
- Chinese chive : 1 bundle
- Enoki mushroom : 1 bag
- Fried tofu : 5 sheets
- Salt and pepper : a little
- (A) Chin dashi (4 times concentrated) : 1 tsp
- (A) Mirin : 2 tsp
- (A) Chopped garlic : 1 tsp
- (A) Grated ginger : 1 tsp
- (A) Oyster sauce : 2 tsp
- (A) Doubanjiang : 1/2 teaspoon
- (A) XO sauce : 1/2 teaspoon
- Chopped green onions : Appropriate amount

Finely chop the leek. Cut the enoki mushrooms into small pieces. Loosen the root. Cut the fried tofu in half and turn it over. Put leek, enoki mushroom and minced pork in a bowl and sprinkle with salt and pepper. Insert (A) and squeeze it firmly by hand.

Warm the frying pan over medium heat, pull the oil and line up the fried tofu. Press down from above with a spatula, cover and bake for 2-3 minutes on both sides until browned.
