- red perilla : 150g

Remove the thick red stems.
Place red perilla leaves in a bowl of water.
Wash the red perilla leaves in a bowl of water under running water.
Give the red perilla leaves to a colander.
Squeeze the red perilla leaves with your hands and drain. -

Add mirin to the pan and heat.
Add 1 to a pot, heat until 1 is soaked in mirin, and simmer for another 5 minutes.

・This akajiso drink is made with vinegar and mirin, making it mild and refreshing.
・Because mirin contains alcohol, the extract is easy to come out.
・Add red shiso while the mirin is still cold, and boil it while the mirin contains alcohol.
・In step 2, if the heat is too strong, it will evaporate, so lower the heat a little.
・When removing the stalks of red perilla, only the leaves are torn off and the wood part is not used.
・There are red perilla with curly leaves and red perilla with flat leaves, but the type does not matter.
・Akajiso drink can be stored at room temperature, but if stored in the refrigerator, it can be stored for more than half a year.
・You can also make furikake by adding soy sauce, dashi granules (dashi powder), and sesame seeds after chopping the leftover red perilla and frying it in sesame oil.
・Akajiso drink can also be used as a substitute for salad dressing.
